Mediterranean Topping for Cod
1 tbs olive oil
1 small onion, chopped
1 red pepper, chopped
1 cup chopped tomatoes
¼ cup black olives, chopped
1 TB Signature Spices Nutty Basil Pesto Seasoning
salt to taste
1 tsp sugar
4 Cod fillets
Heat the oil and fry the onion and pepper until soft. Add the tomatoes, olives,
Signature Spices Nutty Basil Pesto Seasoning, salt and sugar and simmer for 15
minutes, until thickened and reduced.
Place the cod on the grill and spoon the tomato mixture evenly over the fillets. Grill
for 20–25 minutes or until cooked through.
