Island Pork Roast


2 lb Whole Pork Roast
2 TB
Signature Spices Jamaican Jerk Rub
Salt to taste
1 cup apple juice
3 TB honey


Puncture the roast with a knife several times.  Rub the salt and
Signature Spices
Jamaican Jerk Rub
into the roast.  Cover and refrigerate up to 24 hours.  

Place the pork roast in a roasting pan.  

In a sauce pan, combine the apple juice and honey.  Pour over the roast, cover and
bake at 325 degrees for 3 hours.  Baste with the apple mixture often.  Add water if
necessary.
