Roasted Vegetables

1 small zucchini
1 small yellow squash
1/2 lb asparagus
2 ripe tomatoes
1 lb mushrooms,  cleaned
1 large Vidalia or Red onion
1/4 cup olive oil
1 TB
Signature Spices Herbes de Provence
1 tsp Salt



Cut all the vegetables into chunks.  In a large bowl, mix together the olive oil, salt and
Signature Spices Herbes de Provence.   Add the vegetables and coat with the oil
mixture.  Marinate for 1 hour.

Preheat oven to 350 degrees.  Place vegetable into a shallow roasting pan, and
place in oven for 45 minutes. Stir twice throughout cooking time.
