Kedgeree
2 TB butter
1 onion, diced
1 tsp Signature Spices Mild Curry
1 tsp salt
2 cups water
1 cup Basmati rice
1 can French fried onions
1 package (10 oz) frozen peas, thawed
1 can (6 oz) solid light tuna in oil, drained
6 hard boiled eggs
In sauce pan, saute onion and Mild Curry powder in butter until soft. Add salt and water and bring
to a boil. Stir in rice and cover with a lid, cooking for 20 minutes.
Spread French fried onions on a plate and microwave for 30 seconds until crisp. Place peas in a
strainer and run under hot water . Combine rice, peas and tuna and sprinkle with the French fried
onions and serve with hard boiled egg on the side.
