Asian Ribs
1/3 cup soy sauce
2 TB dry sherry
2 TB hoisin sauce
1 TB vegetable oil
1 tsp Signature Spices Chinese Five Spice
1 clove garlic
1/4 tsp pepper
3 pounds meaty pork spareribs or loin back ribs
For marinade, combine soy sauce, sherry, hoisin sauce, vegetable oil, Signature
Spices Chinese Five Spice, garlic, and pepper. Place ribs in plastic bag set into a
shallow dish. Pour marinade over ribs; close bag. Marinate in the refrigerator 4 hours
or overnight, turning bag occasionally to distribute marinade.
Remove ribs from marinade, reserving marinade. Place ribs in centre of cooking
grate. Grill 1 to 1-1/2 hours or until tender, brushing with reserved marinade during
the last 20 minutes of grilling time. To serve, cut ribs into 2- or 3-rib portions.
