Aztec Chicken Kabobs
1 lb Chicken Breast, skinless, boneless, cubed
1 small red onion, cubed
1 yellow pepper, cubed
1 green pepper, cubed
1 small zucchini, sliced 1/2 inch discs
1 TB Signature Spices Aztec Rub
1 tsp Salt
Bamboo skewers, soaked in water for 30 minutes
In small bowl, combine chicken, salt and Signature Spices Aztec Rub. Cover and
refrigerate 15 minutes or up to 4 hours.
Assemble the kabobs on the skewers by alternating the vegetables and chicken.
Grill until the chicken juices run clear, making sure to turn the skewers every few
minutes to grill on all sides.
