Thai Spiced Mackerel




4 Mackerel Fillets
¼ cup olive oil
½  lemon, juiced
1 TB
Signature Spices Golden Thai Rub
2 TB light soy sauce
2 TB orange marmalade  
1 small onion, diced
1 red chili, deseeded and finely chopped


Place the fillets in a shallow dish.  Combine the oil, lemon juice,
Signature Spices
Golden Thai Rub
, soy sauce and orange marmalade in a small bowl. Pour over the
fish and scatter with the onions and chili. Cover and refrigerate for 1-2 hours.
Cook the fish on the grill for 10-12 minutes or until tender.

Makes 4 servings.
