Caribbean Roasted Chicken



1 whole chicken, 4-5 pounds
2 TB butter, melted
11/2 TB
Signature Spices Caribbean Rub
1 tsp Salt
1 cup of water
6 medium red potatoes, washed and cubed




Create a wet rub by combining the butter, salt and
Signature Spices Caribbean Rub
in a small bowl.  Use this rub under the skin, by gently lift the skin away from the
chicken breast.  Make a large pocket to easily spoon in the rub mixture and evenly
distribute over the meat.  Place the chicken in a large roasting pan, add the water
and cover.  Roast for 1 hour in a 350 degree oven.  Remove the lid, add the
potatoes and roast for 1 more hour until chicken and potatoes are done and
browned.
