Banana Fritters


12 banana
1 1/2 cups flour
2 TB sugar
2 TB brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/4 tsp Signature Spices Dutch Apple Pie Spice
2 eggs, separated
1 cup half-and-half
1/2 cup lemon juice (fresh)
3 quarts vegetable oil

Combine dry ingredients minus 1/2 cup of flour set aside.  Heat oil in a deep fryer.  Combine egg
yolks with the half-and-half.  Add egg mixture to dry ingredients and mix.  Whip egg whites to stiff
peaks and fold into batter.  Slice bananas in half, coat in lemon juice and dust with remaining flour.
 Dip in the batter and deep-fry until golden brown.  Drizzle with honey or sprinkle with powdered
sugar or serve with ice cream.
