| How to make "Fresh" Pumpkin Puree |

| Buy a "Pie" Pumpkin (sometimes called a "Sugar" Pumpkin) which are much smaller and sweeter than the "Jack-O Lantern" Pumpkins. They have a less grainy texture which makes them good for cooking because it will be smooth. To prepare the pumpkin for cooking, wash the exterior of the pumpkin with warm water, don't use any soap. Cut the pumpkin in quarters, remove the stem and scoop out the seeds and loose fibers. Microwave Directions Put the pumpkin in a bowl, add 1 1/2 cups of water and microwave it for 15-25 minutes or until soft. Oven Directions Lightly oil the cut surface. Place cut side down on a jelly roll pan lined with foil and lightly oiled. Bake at 325 degrees for 30-40 minutes or until the flesh is tender when poked with a fork. Let the pumpkin cool for 30 minutes so it will be easier to handle. With a large spoon, scoop the pumpkin from the skin into a food processor. Puree until smooth. The puree can be used for any recipe calling for "canned" pumpkin, such as Honey Pumpkin Pie or Pumpkin Roll. |
