Chai, (rhymes with 'pie') is the word for
tea in many parts of the world. It is a
centuries-old beverage which has played
an important role in many cultures.  Chai
from India is a spiced milk tea that has
become increasingly popular through out
the world. It is generally made up of rich
black tea, heavy milk, a combination of
various spices and a sweetener.  The
spices used vary from region to region
and among households in India. The
most common are cardamom, cinnamon,
ginger, cloves, and pepper. Indian chai
produces a warming, soothing effect,
acts as a natural digestive aid and gives
one a wonderful sense of well being. It's
difficult to resist a second cup.
Brewing chai is fun and allows you to experiment
until you get it 'just right' for your personal taste.
There are several methods you could use to
make chai tea.   Add boiling water to the tea and
allow it to steep for 3-5 minutes.  Filter into the
tea cups, add milk and sweetener to taste.   Or,
boil a mixture of water and milk,  or just milk, as
much as needed for the entire serving, add the
chai tea and sweetener and continue to heat for
about 5 minutes stirring often. Strain the tea
directly into tea cups.  We recommend 1/2
teaspoon chai tea per 2 cups of liquid,  increasing
or decreasing it to your taste.   Because this tea
has many rich spices, you will not need as to use
as much as your typical teas.   The sweetener will
also bring out the warm flavors of the spices.
