| Jamaican cuisine is special because the Jamaicans have always been aware of the relationship between food and health. Jamaican Jerk was originated by the original natives of Jamaica. They used Jamaican Pimento (allspice) and peppers to smoke and preserve meats. They would place meat on a grid of green sticks above smoldering green pimento wood (the wood of the allspice tree) in a shallow pit, then cover the meat with pimento leaves to further the flavor while trapping the smoke. The process was later refined and influenced by pirates who brought new spices to Jamaica from South America and other parts of the Caribbean, and the process was even further refined and influenced by the Maroons, who were Jamaican slaves with skills at slow roasting in pits, that escaped from the British during the invasion of 1655. |
