Jamaican cuisine is special because the Jamaicans have always been aware of the
relationship between food and health. Jamaican cooking was considered poor people
cooking, and the food was always delicious.  Back in the 50’s and 60’s, cooking was done
in the outside kitchen on a charcoal stove, or just plain outside in the open and this is
where Jerk barbecuing was created.
The Jamaican’s have perfected this type of
barbecuing seasoning, and it can be applied
to fish, chicken and pork.  Bake it in the oven
